Ever been deer stalking?

I guess the answer is I don't know, I do however have a local patch where I've been lucky enough to see some great and usually shy species and all this done on my bike. I've never been deer stalking, but I'm guessing trying it on a bike would cause more noise than on foot hence my comment about noise over colour.
 
I agree about the noise issue.

Most of our species have incredible hearing, not so many have such incredible eyesight. Nevertheless, you would be surprised how effective camouflage is for gaining an advantage.
 
I find it easy to see deer by bike. The local nature reserve ranger told me that deer don't perceive the smooth movement as human. Typically they only bolt when I stop for a better view. But my bike is Matt grey, which definitely helps.
 
They tend to become accustomed to vehicles, and as you point out react to the human exiting or disembarking.

A good way to photograph deer with least effort is to take a window mount camera and drive slowly using high iso film.

Or open your window and wait for them to come near, poking your lens through the curtains.
