Bigger wheels on my GT?

Here's the adapters I made. Like I said they're not pretty but it's for my commuter/pub bike so it will do fine.

Could a set of maguras be adapted to fit?

Possibly... although I wanted the bike to look simple and sparse if you know what I mean? Plus I have some of those cool parallel pull brake levers I want to keep using...
