My vote goes to the inimitable Brooks Sprinter. Produced from 1925 onwards, I've been putting them on vintage bikes since forever.

Super comfortable, and still relatively affordable.

Hard to beat the Flite, I've had at least half a dozen and have not managed to landfill any of them yet...

Back in the 90s, the slim design of saddle (eg the flite in the photo) replaced the bulkier designs of the 80s. The 90s had a popular saying that said you can see an old pro's bike by the Rolls saddle
 
I had Vetta saddles on my old Norco Monteray SL and it was super comfortable for me unlike the reproduction Selle Italia Turbo I bought about 10 years ago. I found one on an MS Racing bike I bought for parts and I moved it over to my Miyata 1000. No idea the model. Still feels great. Sad the brand died.
