The Germans to the rescue! Canti studs sorted thanks to brake-stuff.de, and a new 1 1/4" headset is on it's way here thanks to mtb-kult.de. Just need to attach some brakes and connect some cables.

Here's how it came out in the end! I went for utility rather than period correctness on this one, so big flat pedals, Ourys, a new cassette, and Tektro V-brakes got to replace the old XT-stuff. Got a nice new Flite as well. The front wheel is slightly out of true, the hub on the rear one could probably do with a service (or replacement) and the frame might just be a tad too small for my optimal size, but it's stilla very fun and nippy little rascal of a bike!
