That really is something special. lovely junctions between the tubes. So smooth. Love the look of the 90s shimano stuff, before they tried to hide all the cables, and the the wheels really set it off - deep section wheels do look great with skinny tubes. Looks immaculate.
Only thing i will say, is how about shiny bar ends?

There was a Charles Sabliere in Lyon in the 50's - Andre Sabliere was in Saint Etienne
I am trying to confirm their link - I suspect strongly there is one. Andre Sabliere had the mentions about him on the following pages suppressed God knows why !

Rubbish, wheels look great. Exact period correct bikes lack imagination from their owners ;)
 
Seen as the rest of the bike is so conservatively styled, how about some nice deep late 1990s/early noughties Mavics with plenty of lurid yellow? Or, you could stick with the silver and get something like a shamal, and have as many silver bits as possible. Although then it would be a shimpagnolo hybrid, which might be a step too far.
Whatever it is, I would say go shiny not matte, even with carbon.
