Steel frames: can be reasonably light, relatively easy to repair (not that any of mine need it), seem to have longevity and robustness on their side.
Rigid bikes: simple, light, don't bob about like a mad thing when you're climbing off road. Also, they get rid of food trapped in your teeth when your descending hills - win / win.
Cantis: god's own brakes - even with the self-selecting / theistic dichotomy.
Flat pedals, toe clips and straps: I don't have to worry about particular footwear, but still get my feet positioned well, not slipping about, and able to exert some effort on the upstroke.
