Has anyone polished a set of steel wheels before? Is it ridiculous idea to even try!

Polished many a set...

Do you mind me asking how you protected them after they'd been polished. From what i read they are going to start rusting as soon as I touch them.

You'll really struggle to find old 27" rims with 40 holes at a sensible price. They are rare and only pop up from time to time so always command a high price. If you're not too worried about going to 36 spokes front and back I think your best bet is to either look out for a pair of second hand replacements (loads on eBay) or check out some of the new wheelsets on eBay:

Bankrupt Bike Parts often has 27" wheelsets for sale, but I can't comment on the quality: http://www.ebay.co.uk/itm/201225146467

I've got these on her bike and they are bulletproof, but not polished: http://www.ebay.co.uk/itm/351224116938

I've not used them yet, but they've been around for ages and I know other riders who have used these guys' wheels and said the quality is good: http://stores.ebay.co.uk/Single-Speed-Components

The only reason i wanted to keep the original hubs is because they are from an old track bike so you can flip the wheel from a 5 speed cassette to a fixed wheel. I would've liked to have kept this detail but if i can get a similar one for a 36 hole i might go for that.

Clean them after eery ride, especially if damp or wet. A very lightly oiled rag wiped over the top of the rims only will help. They are more high maintenance than alloy but the finished look is stunning.

Here is my 65 Sun Snipe Plus, the original Dunlop steel rims are polished or wiped down after every ride.

Some good choices there, the RM 19s are satin finish, but as you say bullet proof. Ive got a lot of good stuff from BBP
