Hello, I have a pair of original Mavic Crossmax SLR for V-Brakes. They are the ones with ceramic braking surface, UST rims, and carbon front hub. They weigh approximately 1450g with tubeless valves and a bit of Stan's residue. Low miles(~400-500), no major scratches on rim and none on the actual braking surface, recently trued and had the freehub serviced. I can also supply a pair of Maxxis Aspen 2.1s that I had set up tubeless and weigh approximately 550g each.

As far as I can tell, they fit all your requirements perfectly...except price. Unfortunately I was looking to get $400 US or ~£265 at current exchange rate. Shipping to the UK would add even more money on top of that. If you are still interested, we can discuss price. I am more than happy to provide more detailed pictures and answer any questions you may have. They are a great wheelset and with the anodized red hubs would match your Rocky well, I'm just moving on to discs.
