2 slightly techie questions

Would like some assistance please:

Shimano M570 LX hub (2005 ish?) fitted with an 8 speed cassette, does a 7 speed also fit?

Where a wheel has a specific dish and you want to alter it, is a decent wheel builder able to easily/simply redish it or is a re build required?

1. Yes, just put a spacer behind the cassette.

2. Yes, unless it's wildly dished one way and needs re-dishing the other way, in which case spoke length may be an issue. But usually Yes.
