I didn't realise cassettes came up to 34s :shock: - no wonder I have issues climbing.

There are the mental Shimano Megarange cassettes that are normal until you reach the biggest cog and it's a hoooooge jump up to it. The biggest is about a 34 and the next one down looks like around a 26.

I'd run the 36t. Should be low enough for most stuff, but will give you a bit of speed on the flat/downhill.

I have a 36t on my 1x7 Kona

it's only a 6% jump in ratios between 32 and 34... but switching from 32 to 36 would be noticeable (12% jump)... depends whether you need (with an 11-32 cassette) a 26"-76" range (32 ring), 28"-80" (34 ring) or 29"-85" (36 ring)... if you never used really your granny ring in the past then maybe try 34 or 36 ring with an 11-34 cassette :? numbers numbers numbers... I run 32 tooth with 11-34 cassette but have a 34 stashed if I end up using the high gears a lot (only ridden bike in question once so far!)
