On an unrelated note, I have an old DX derailleur as well, and the wire anchor bolt screw has stripped...what is the part# or what can I use to replace it?

Also had a muck about with adding a rear disc as an emergency ā€œdrag brakeā€, thought Iā€™d try before I buy and used a front from another bike. Yes, but thatā€™s original, itā€™s the linking pair on the near side.
As for parts Iā€™m trying to stick to ā€˜87-ā€˜90 as a rough guide. So far itā€™s only the wheelset, forks and seat posts that arenā€™t.
 
Looking really good! Why have you got the gripshift cable barrel bits above the brake levers though? They're usually installed below, looks a lot better and cabling is probably easier
