This is unbelievably cool. The history of the bike is so awesome, I would keep it as is, your sentimentality regarding the patina is justified.
Also, there is currently a competition running, that bike is an instant contender for Bike of the Month.

Well that's January finished already! This month's competition is one of my favourite categories; fillet brazed special. To clarify, the frame of the bike needs to be at least partially fillet brazed in order to qualify. Bad organisation on my part means I don't think I'll get anything entered...

That is by far the nicest Cook I have ever seen. Racing in the early-mid 70's with a modified Schwinn against Cook bikes had me lusting after them but no dough to buy one. There were LA teams always at local SF area races to promote their goods. Still want one with 26" wheels now. I'm so jealous...
