So would it be best to find a chainset with a narrower chainline? It seems all their single ring deore options have the same chainline: https://bike.shimano.com/en-EU/product/component/deore-m4100/FC-M5100-1.html Are there suggestions for other ones to use for a 135 rear spacing?

I'm building up a 1990s GT Avalanche. I've installed a MT510 hollowtech BB and then a MT510 12 speed chainset. However, now I've also installed the rear casette, I'm not getting a great chainline between the two - with the front chainring being basically in line with the last cog on the casette...

Ok, so it sounds like best idea would be to get cantilever front brake (with a dia compe U-brake on the rear) then they can both use the same types. I was looking at these, but they only work for the V brake type right...

One more question on this - do I need different brake levers for V brake and U brake? Or can I use V brake levers for both sets?

Could I run U brakes for both? Do people not prefer that to have both looking the same?

I’d be keen to take just the fork if you’d consider splitting?
