It looks like a Litespeed stem, however need closeups of the dropout welds. Unfortunately also suspect damaged frame tubes from the engine mounts, and kickstand. What dumb a-- would use a nice frame for a motorbike?????
I forgot an important bit of info: When you use any Shimano chain, the included connecting pins are fiddly bits, so get a master(quick) link, ther'e not expensive.
IMHO IG chains shift the same or even slightly better on HG gears, even though they are not supposed to. I've been using them for years instead of HG chains. Just my two pence.

Back in the days of us oldies, when I was a youngie, I first used Renold chains, then discovered Sedis chains,, and still use them in their more modern version SRAM PC-870. The Sedis Gold was the non plus ultra back then.

I've used Marc two tone's method on my bikes and customer's bikes for 40yrs plus. I believe less tension through the derailleur is easier on the chain and freewheel/cassette!

Cantilevers will fit and work great, however cable stops are required for frames made for V brakes. More importantly you will require cantilever brake specific levers as cable pull is different. Look at photo's of canto bikes to see what cable routing difference is.

The internal part of the brake arm that slides over the stud. Put a small dab of grease on the stud bearing surface as well as loctite blue on the brake arm fixing bolt during final assy.
