Tires are easy to change out. My thought ws that whatever it had on it, someone would want something a bit different. So I left the tires on it that it had when I last rode it (one came with the bike and the other I put on after a flat).

That is a really short stem Walter? You must have really long legs for your height... You are correct in that it is a shortly...too short for me. It came with the bike. I am currently looking for a longer one and some wider bars of the correct era.

My thought is to do what you want to do...and to ride it! There is no right or wrong here. For me, the Mexico was a preferred model and the Saronni paint is killer. I would go back there... A photo of mine is attached.
