Well, for now I intend to pick up some 600 Ultegra brakes to replace the 105 units that came on the bike. That will get it fairly consistent overall. Longer term I could see converting it to period correct Dura Ace or perhaps even Campy.

It is indeed. Panasonic did that on a couple of models actually.
