Which handlebars: Colnago Mexico circa 82'

These tended to be supplied by Colnago as frames rather than complete bikes, I believe, so there is no right or wrong bar. Most will have been built up with either 3ttt or Cinelli, I expect. Popular period choices:

3ttt Competizione

Cinelli 64

Cinelli 66

I had all 3 on my 82 Super at some point or another... As for size, it depends on what width is right for you. I like 44cm width, but 42 seems to have been more common.

You'd need to choose the stem to fit --- 3ttt and Cinelli had different diameters at the clamp --- see velobase links above. Stems:

Cinelli 1A: http://velobase.com/ViewComponent.aspx? ... &AbsPos=47

However, there were doubtless Colnagos built up with Dura Ace, SR, ITM, ..., so whatever you find from the period that takes your fancy. There are plenty of the ones listed above around either here, Hilary Stone, ebay, ...

Disclaimer: just my suggestions... Hope this is of some help.
