Giant might be a good brand to look at as usually cheap and plentiful but decent, Gary Fisher bikes always ride really well in my limited experience , nice geo, and also often a bit "under the radar" something like a "Big Sur" would be nice
As far as frames go... Schwinn Homegrown Factory (some of the best ally hardtails out there and not too exotic or crazy expensive). I would also recommend maybe some vintage carbon? Trek 9700 or Giant MCM are really light and offer good comfort plus they're not highly collectible so you can pick one up for reasonable money. As far as the forks go, I would say SID or Manitou Mars CL, nice air forks that are pretty light and work way better than elastomer boingers.
