Just novatecs - I've got them on several bikes and they are performing well.
Will be 9x1.
I am, however, intrigued by @Mickeyspinn set-up. Any pics? What hubs do you use? Cassette? Freewheel?

I am not very happy building a symmetrically drilled rim on an 11 speed hub. Just doesn't feel right, but I'm not an expert wheel builder. I've decided to offset the rear wheel by 3mm towards nds to reduce the dish. Might be a dumb idea, but hopefully I won't have any issues with handling or setting up the brakes.
Err....my set up? My chop 9 and 8 speed cassettes down trick?
It's real simple... buy a cassette and remove the silly ones....11 and 12 get binned mostly for the time spent and miles covered using them....pointless! and then usually the biggest combined with a double upfront just gives great chainline in all gears. do it right with the right BB and cassette spacers big big is happy and little little too.😁
As for hubs....anything will do aslong as it's got a freehub and spacing is right 👍

A wheel 3mm off centre won't ride too pleasant....that's hanging off the side of saddle to go no hands territory!

I can always re-dish. I was hoping 3mm won't be noticeable.

I'll keep that trick in mind for the dark times in 10 or 20 years when sourcing 9-speed shifters & cassettes will be next to impossible.

It's not so much going no hands .... it'll have a ride feel like a scuttling crab! Lefthanders fast and snatchy right-handers it'll drift off your expected line...or vice versa! Probably has an effect on braking too!
I always judge a bikes handling and accuracy on no handed riding....a well set up bike should track no sweat and feel safe and stearable without hands on the bars.
 
Did you do an asymmetrical rear wheel because of an asymmetrical rear end?

Done it for a beater bike that was of out whack too. It's a case of two wrongs make something right-ish. Not ideal of course.

PACE did an asymmetrical frame if I remember right.
 
I've set a symmetrical frame for standard wheel, but since I have the power to set the rear to whatever I want, that would be a longer-term solution for a stronger wheel.
Given that asym 650B rim-brake hoops are not that easy to find.

I'll just stick the wheels in as is. If I can feel it, it's a matter of turning the spoke wrench half a turn on nds. And then re-tensioning the wheel 😂

I should just ride a carbon frameset. Won't have all these choices to get lost in.

If it's gonna be a regular rider I'd try to keep things as standard symmetrical as poss....just means you can chop and change wheelsets easy.

That rear end.....god....I think I have everything written down somewhere...that rims had a tweak over to one side,stays are asymmetrical and hub spacing isn't standard...😆 All to get a hub gear in a bike that was never designed for it with a narrow tread using road double cranks as a single on a 73 BB....1/8 chain for extra fun.....if it ever when in a bike shop their heads would spin !
 
Personally would start out with a symmetrical wheel for a symmetrical frame since that is what you have.

If both wheels are not in the same vertical plane you will be fighting the bike. On my first test ride I would most certainly like the knowledge of properly dished wheels so I can zone in on other things about how the bike feels. Could also cloud your decision to how the headset is performing. You should correct the frame ideally.

It makes sense - the 11sp hubs have the ds flange sitting very close to the centre. Who needs 11s anyway!
But the bike industry is doing a grand job of discontinuing older standards to force you to "upgrade".
It might have been quite a few years since the last high end lightweight 9sp hub was made (and I don't even need 9 - I am pretty sure I can get away with 7).
