I think most parts angles are covered over the years. Not going into the brands I have never owned as the list is LOOOOONG but nothing stands out as "I really want to own a / wish I had owned a ...."

Ti frame, check (project T2).
Yellow Maguras, check (project Zaskar).
Carbon frame, just waiting to make space in the shed so I can pick it up
Road bike...well, lets not get carried away.

more for my list of never dones:
smoke/dart tyres, is this some sort of rite of passage?
multi-coloured spokes, was a bit of a craze mid-90's but I never felt the need
