Hi, that looks like an interesting summer project you have there, with a family history, should keep you busy!
The Brooks saddle looks like the original 1960's item, maybe a B15 or B5N. If you remove it and check the corners of the cantle plate on the underside (the steel curved plate to which the rivets are attached), you'll likely find a letter and 2 numbers e.g. 67 B. That gives you the year, and I think the letter (A, B, C, D) relates to the quarter (not certain on that.)
Armed with that, check the Raleigh and Sun catalogues online, and also EBay bikes-for-sale, see if you can match up the frame/forks, and ultimately the exact model of bike.
