Please educate me about threaded steerers/quills etc.

From a fitting/maintenance point of view i've only played with aheadset style systems.

I have an old P7 frame that takes a 1" steerer fork. On it I have an aheadset and I have a aheadset type stem.

I have an old F7 fork that is threaded with a small steerer. The steerer doesnt go past the headtube, is this a problem if a get an old style headset/quill/stem combo or something else?

Yes it will be a problem - with a threaded steerer it must protrude above the head tube by the stack height of the headset - so nowhere near as much as ahead, but still around 15mm.
