Seems many of these only had a front brake. Is that the norm?

By the 70s/80s most bikes had gears and brakes, except track bikes which I think Peugeot didn't dabble in, but happily would be corrected.

This is all I've seen thus far. Looking for a single speed, as well, simply for fitness purposes around the neighbourhood. I don't think I'd use a single speed to commute (>26km daily). But this could be fun around the neighbourhood. Dirt cheap, too. But one front brake makes me wonder - I use my back brakes a lot.

That's a relief. So actually, not many. That's a homebrew single speed conversion of a low end road Pug.
A classic cheap target, get Dad's old 10 / 12 / 14 speed racer that's sat at the back of the shed for years, and make it into something low maintenance for city / town duties.

Good luck with your search. Be a bit careful with these type of bikes. The fixie / single speed boom died about 10 years ago, so these are finding there way on to the market, and usually they have had a hard life of city abuse and parked outside.

You need to be a detective. One clue you might have overlooked is the cable stop on the right hand chain stay. It was there for the derailleur that isn't anymore. I'm tempted by the junker Peugeots too, but to my understanding, they weren't quite standard, so replacement part aren't always going to fit
