Help with converting to single chainring

I've not touched bikes with gears for a while now, and cannot remember how I would go about doing this. Help?
 
I understand the appeal of the simplicity, lightness and durability of fixed and single speed, especially if you live somewhere reasonably flat, or are cycling short-ish routes, perhaps in a mailnly urban setting. However, I don't understand the "yuk, horrible gears" attitude expressed in the video, they are pretty useful when it's hilly. And as for being unreliable, I've got a 21 speed set up on my older bike and I think I've only had to tinker with it about three times in 22 years.
