Finally fitted my replacement forks, new headset and testing a new saddle and seat post… not sold on the saddle (pics to follow).
Forks are Manitou X Vert triple stanchions

I have a 2000 east peak which is my first full suspension bike and I find myself riding it the most lately.
I don’t suppose you can point me in the right direction for the rest of the catalog you posted?

If you ever want to try disc brakes, I made an adapter plate and I could soon make another one.

Brilliant! Yes you need a custom caliper adaptor for these which I always found odd
