Anal question about bearings...

Sorry guys

I need to rebuild my Deore XT front hub they were a set I picked up second hand so I cant be sure they haven't been opened previously, does any one know how many bearings I should have each side. I have ten in each but there is room to sit 11. I don't want to build them up only to find I'm one short. Also any advice on repacking these types of grease etc.

front 2x 10 balls 3/16
rear 2x 9 balls 1/4

Motorex grease is very good ...as is Campa grease
