Bar tape must be white. Saddle can be black or white, but it can't have gel in it. That would be wrong, even if the gel-saddles existed at the time.

No, that won't look right.. I assume from your answer that the shifting electronics is in the brake/shift levers and not in the deraileurs themselves ?

I assume you want that headset to complete a time-correct build ? If not (and even if you really need it) I would steer well clear. The quality sucks. I have had 2 of them and the bearings lasted about one season. I think a CK headset would be just as time-correct :)
