Might be worth throwing the Panaracer Gravelking SK into the mix here for future searches. Light, folding, retro-friendly width and offer decent grip on a variety of surfaces.
Panaracer also make the Comet Hardpack in a 26" which is an excellent tyre but I'm not sure whether it's produced...
Have you considered TRP Hylix? They're a shifter-less drop bar hydraulic system.
Granted it's probably easier to just purchase the full brake set, some folks hace had some success with TRP x Shimano 'frankenbrakes' if you were to find just the levers.

It's a different bike with revised cockpit. The original set up was quite long in the reach and rather uncomfortable for longer rides. I think this strikes a balance between looking original (or at least in keeping with the period), but _actually_ enjoyable to ride!

You can get them resoled through Hanwag but I'd recommend contacting Lancashire Sports Repair (linked above) as they're an authorised resoler for Hanwag and carry the factory sole units. Provided the uppers are in good shape, you should be in a good position for another 9 years...
