On my bikes that don't have a front rack I often use this bag support. It keeps the tops of my bars free for my hands, and works well with a medium-sized rando bag.

My go-to chain is a KMC 8-speed for anything up to 8-speeds. Usually works well. However, I have run into thicker T.A. Cyclotouriste chain rings that were made to work with 1/8" chains, while most derailleurs want 3/32". In those cases I use the SRAM PC1 1/8" chain.

On one of my first Shimergo projects I used a fairly modern Deore: It shifted well, but I didn't like its bulky looks, so I swapped it for an older, more elegant SIS mech:
