I might possibly go with the Deore XT M737 combi levers set up over the Deore XT top mounts it seems to suit it better and it ties in with the front and rear mechs.

These are the forks the steerer including threads measures 183mm

I've got some black threaded steerer Project Two's (non triple butted) off a 92 Kona Firemountain the frames a 20 inch which i think puts the steerer length including threads at 185mm.

T They're built like tanks shimano shifters they last forever, your more likely to crack a Alpinestars Almega/Cromega downtube if you flipped that upside down than break one of those 😁😂🤣

My set up and when you get a puncture and flip the bike upside down to remove a wheel it's more stable resting on the shifter levers, for extra stability right hand lever pushed to 7th gear and left lever pushed to big chainring positions 😁😂

I'm getting you with that because I've no doubt it will look good all polished and gleaming and also it's staying original. My conundrum is after stripping the whole bike down and polishing the frame etc to build it back up but think na not happy and then have to strip it all back down again...
