Take a long flat head screw driver and knock the inner head of the rivet off from inside the bottom bracket.
Its very easy and will only take 1 or 2 blows. Then you can prize the cable guide off. Once frame is painted you can pop it back in place. whats left of the rivet will hold it in place...

Not seen him do any thing in fabric only leather but might look good reproduced in leather ?

would agree its a Criterium, but its not the 87/88 one its a later one. There was a 89/90 model which had the darker yellow decals and the later 501 decal like yours does.
But I think it still had twin bottles and a cable guides. Altough the guides could have been removed and holes made at some...
I cant recall the model number, but all avocets can use the same two wire mount. So any avocet computer should fit and work. But some have different calibrations depending on model, so you will need to set each one up slightly different in terms of wheel size codes and what not.
